Passion is Everywhere

For my project, I wanted to capture the idea that people are more passionate about things than we realize just by looking at them. My sorority’s new chef, Brian, has a love for cooking that extends beyond his day job. He spends time outside of work preparing new dishes and finds joy in cooking for others. Something people might not expect from a sorority chef is Brian’s impressive cooking background. Born and raised in St. Louis, Missouri, Brian took culinary classes and did an apprenticeship before he worked as a chef in several restaurants. He then spent time in France training in culinary arts and working at a vineyard. He says these experiences gave him a greater love and appreciation for cooking. Brian’s passion for cooking is apparent in all of his dishes. He loves trying new things, and has fun changing up the menu. Although a sorority is not where Brian initially pictured himself, he says he loves it. “The people are great,” he says. “It’s all part of my path. I can’t wait to see where I end up next.”

Brian loved to cook ever since he was young. “It was my grandmother’s oatmeal raisin cookies,” he said. “I would spend all day in the kitchen with her baking, and I was hooked.” He says he can’t imagine himself not being a chef now.

Above, Brian prepares dinner with his assistant chef. Brian enjoys working with the other staff in the kitchen.

Here Brian is preparing a dinner of Chicken Marsala with a side of vegetables. Brian says that he tries to prepare as many healthy meals as possible.

Brian also prepares vegetarian and gluten free options for every meal.

Brian took classes in subjects such as butchery when he studied in France. He says his studies help him to be creative and efficient in the kitchen.

The sorority kitchen is much different than the large-scale restaurant kitchens Brian is accustomed to. He said he enjoys the more laid back atmosphere.

Brian hopes to move back to the South in a few years and work as a chef in a restaurant or on a golf course.

Brian says that his dream would be to work at a restaurant at a vineyard.

Brian came to Pullman when he met his wife. He says he likes it here but wants to move back to a big city eventually.

Brian says that his favorite part about cooking is making something that he knows people will enjoy.
